Pumpkin Pancakes

2 1/2 cups pancake mix
3 tbsp brown sugar
2 1/2 tsp pumpkin pie spice
1 egg
1 3/4 cup milk
2 tbsp oil
1 tbsp balsamic vinegar (optional)
1 cup pumpkin puree


Mix it all together and spoon 1/4 cup at a time onto a hot griddle. These get really fluffy so you have to watch them carefully.

Serve with butter, syrup, and honey.
