Cowboy Caviar

(1) 15 oz. can white corn (drained)

(1) 15 oz. can black beans (drained and rinsed)

2-3 avocados cubed

(1) cup diced tomatoes (no seeds)

2/3 cup cilantro (chopped)

2/3 cup green onions (chopped)



DRESSING

1/4 cup olive oil

1/4 cup red wine vinegar

2-3 cloves minced garlic

1/8 tsp. ground pepper

3/4 tsp. salt

1 tsp. cumin



Blend dressing ingredients and pour over salsa - Refrigerate
